Summer Cucumber Salad
Tomatoes, cucumbers, bell peppers, and fresh mint bring out the best of summer. I like to get these vegetables from the farmer’s market as they do not need a lot to exemplify their sweet and crunch flavor.
2 cups cherry tomatoes, sliced in half
2 cups Persian cucumbers, sliced into coins
2 cups sweet bell peppers, large diced
1/2 cup of olive oil or more to coat salad
2 tablespoons Sherry vinegar
1/2 cup fresh mint leaves, torn into pieces
Salt and and fresh
Combine the tomatoes, cucumbers, bell peppers and mint leaves.
Toss with Sherry vinegar and olive oil
Season with salt and fresh cracked pepper.
